I'm in the market for a new gaming monitor and I'm having trouble deciding between the Samsung Odyssey G7 and the Gigabyte G32QC. Any suggestions on which one is better for gaming?

The Odyssey G7 has my vote! I got one last year and the color accuracy and refresh rate have been amazing for gaming. The 240Hz really does make a difference in shooters, especially when you're trying to land those headshots.
I've been using the Gigabyte G32QC for a few months now and I'm pretty happy with it. The 165Hz refresh rate is still great for most games, and the 1440p resolution gives me more screen real estate which is useful in some competitive situations. YMMV though, both are solid choices.
