I've used both CPUs in my builds before and I must say they're quite different. While the i9-13900K does have a higher single-core turbo frequency (5.80 GHz) which is great for gaming, the i7-12700K has better color accuracy due to its IPS panel.
I recently built my computer with an i7-12700K and I'm quite happy with it. It works well with my gaming setup and doesn't seem to bottleneck my GPU performance.
