I'm in the market for a new CPU and am trying to decide between the Intel Core i7-14700KF and the i7-11700K for gaming purposes. Can anyone provide some insight on which one would be better suited for my needs?

Yeah, I've been using the i7-11700K for about six months now, and it's been great for gaming. I can run most games at max settings without any issues. The only time I felt like it was lacking was when I tried to do some serious 3D rendering. But if you're mainly into gaming, both CPUs should serve you well.
