I was wondering, does anyone know about the performance difference between the Intel Core i5-14600 and i3-14100 for video editing tasks? I've been looking at getting a new CPU for my workstation.

Yeah, I've been doing some research on that. The Core i5-14600 outperforms the i3-14100 in video editing tasks due to its 6 Performance cores and 8 Efficiency cores. It also has a higher base frequency of 2.70 GHz and single-core max turbo boost frequency of 5.20 GHz.
