I'm looking to buy a new Sony A80L TV and was wondering if anyone could provide some information about the HDMI inputs? Specifically, how many HDMI 2.1 ports does it have?

I recently bought an Anker 8K HDMI 2.1 Cable (6.6 ft) and it works great with my A80L. It supports all the features that I need, like VRR and eARC.

@LarsofArcana's recommendation is a good one. I've also had positive experiences with the Monoprice 8K Certified Braided Ultra High Speed HDMI 2.1 Cable. Both of these cables are reliable options for the Sony A80L TV.
