I've been considering the Ryzen 7 5800X3D and Ryzen 5 3600 for my next build. I was wondering if anyone has any insights on the cooling requirements for these two CPUs?

I just got my hands on an AMD Ryzen 5 3600 and it runs great with my custom loop. I didn't have to worry about cooling at all! As for the 5800X3D, I've read some mixed reviews on cooling requirements.

Yeah, I've successfully overclocked my Ryzen 5 3600 and achieved some impressive results. The process was pretty straightforward.
